    A mixture of clay and limestone with a marly tendency. The prevalence of clay allows micro-organisms to proliferate which interact with the plant’s root system and confer unusual mineral nuances to it which are different from those of the Champagne region, further north, and more similar to those of Chablis, which is just a short distance away.

    Appearance: pale golden yellow with greenish highlights. A powerful, vigorous mousse with an elegant and plentiful perlage.
    Bouquet: intense, bright, youthful, expressing all the perfumes typical of Pinot Noir: the floral wisteria bouquet gives way to fruity aromas in which white peach and quince apples stand out. A small, semi-concealed spicy note leads onto a generous, complex mouth.
    Palate: a full-bodied start featuring ripe fruit flavours: peach, apple and fruits of the forest. Its palate, like its nose, is fresh and pulpy thanks to fruit well balanced by an ideal acidity level. This high impact start then gives way to dried fruit and nut nuances and croissant aromas. A balanced, rounded finish with a winningly pleasant salty finish.

  • Food pairing suggestions:

    Perfect with seafood and seafood pasta and rice dishes; excellent with white meat mains but also ham both fresh and seasoned and with simple mushroom based dishes. It is especially good with lard, whose fatty and savoury flavour is perfectly counterbalanced by the structure and intensity of this Champagne.
